Feasibility of producing a range of food products from a limited range of undifferenitiated major food componentsThis report reviews current knowledge associated with producing safe, nutritious, and acceptable foods from a limited number of source independent macronutrients. The advantages, and disadvantages, of such an approach for use by space crews are discussed. The production of macronutrients from a variety of sources is covered in detail. The sources analyzed are: wheat, soybeans, algae (3 genera), glycerol, and digested cellulose. Fabrication of food from the above macronutrient sources is discussed and particular attention is addressed to nutrition, acceptability and reliability. The processes and concepts involved in food fabrication and macronutrient production are also considered for utilization in a space environment.
